The A La Maquina roaster was created out of necessity. Inventor Marshall Berg began roasting New Mexico chile for the New Mexico ex-pats in Portland, OR in 2012. After a few seasons of burnt forearms and inefficient loading using the traditional style roaster, Marshall felt there had to be a better way. A La Maquina roasters are the product of years of testing, tweaking, perfecting, and patenting a safer, more efficient chile roaster.
A La Maquina LLC moved back to New Mexico in 2020 to better serve the New Mexico chile industry and have New Mexico hands building the roasters.

Los Roast was founded in Portland, OR which supports annual chile roasting and a year-round shelf stable line of retail chile products.
Marshall is the founding inventor of A La Maquina LLC which manufactures our patented chile roasters and other pepper processing equipment.
